Cherry pie



Ingredients (for 8 people)

300 g of PGI Marostica cherries
150 g of sugar
150 g of butter
3 tablespoons of 00 wheat flour
3 eggs
100 g of chopped almonds (to taste)
a pinch of salt
1 glass of marsala

Preparation:

Beat the egg yolks with the sugar in a bowl and blanch them,
add a pinch of salt and enough flour to obtain a batter of medium consistency (possibly adding the chopped almonds).
The whipped egg whites are then slowly incorporated.
Separately, cut the cherries in half and depriving them of the bone.
Grease the pan and just dust it with flour.
Then the batter is poured onto which, once distributed, the half cherries will be placed in plain sight.
Put it in the oven at 180 °C for 40 minutes.
